Steak with Creamy Pan Sauce, Mashed Potatoes & Garlic Asparagus
Ingredients
For the Steak
- 1 (200 g / 7 oz) beef steak
- 1 tbsp butter
- ½ sprig fresh thyme
- ½ sprig fresh rosemary
- ½ garlic clove (optional)
- Salt (preferably flaky sea salt)
- Black pepper
- 1 tsp olive oil
For the Mashed Potatoes
- 6–7 medium potatoes
- 1 tbsp butter
- 125 ml (½ cup) heavy cream
- A pinch of ground nutmeg (optional)
- Salt to taste
For the Garlic Asparagus
- 250 g (9 oz) fresh asparagus
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tsp brown sugar
- Salt to taste
For the Creamy Pan Sauce
- 1 tbsp all-purpose flour
- 1 cup (250 ml) beef broth
- 125 ml (½ cup) heavy cream
- Salt and black pepper to taste
Instructions
1. Make the Mashed Potatoes
- Boil the potatoes until fork-tender.
- Peel while still warm and mash until smooth.
- Stir in the butter and heavy cream, cooking over low heat until creamy.
- Season with salt and a pinch of nutmeg, then set aside.
2. Cook the Asparagus
- Heat the olive oil in a skillet over medium heat.
- Add the garlic and asparagus.
- Sprinkle in the brown sugar and sauté for 3–4 minutes until tender-crisp.
- Season with salt and remove from the heat.
3. Cook the Steak
- Remove the steak from the refrigerator 30 minutes before cooking.
- Season with salt, black pepper, and a drizzle of olive oil.
- Heat a heavy skillet until very hot.
- Sear the steak for 3 minutes per side for medium doneness.
- Add the butter, garlic, thyme, and rosemary. Tilt the pan and spoon the melted butter over the steak for about 30 seconds per side.
- Transfer the steak to a plate, loosely cover with parchment paper or foil, and let it rest for 5–10 minutes before slicing.
4. Prepare the Creamy Pan Sauce
- Using the same skillet, stir the flour into the remaining pan juices.
- Gradually whisk in the beef broth until smooth.
- Add the heavy cream and continue stirring.
- Season with salt and black pepper.
- Simmer until the sauce thickens slightly.
To Serve
Spread the creamy mashed potatoes onto a serving plate. Slice the rested steak and place it on top. Arrange the garlic asparagus on the side, then generously drizzle the warm creamy pan sauce over the steak.
