Sweet Cherry Pie Recipe

Ingredients

For the crust:

  • 2 ½ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup (225 g) cold unsalted butter, cubed
  • 6–8 tbsp ice water

For the cherry filling:

  • 5 cups fresh or frozen pitted cherries
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (30 g) cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 1 tbsp butter

For brushing:

  • 1 egg, beaten
  • 1 tbsp coarse sugar (optional)

Instructions

  1. Mix the flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Add the ice water gradually until the dough comes together. Divide into two discs, wrap, and chill for at least 1 hour.
  3. In a bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla, and almond extract.
  4. Roll out one dough disc and place it in a 9-inch pie dish. Fill with the cherry mixture and dot with butter.
  5. Roll out the second disc and create a lattice top. Seal and crimp the edges.
  6. Brush with beaten egg and sprinkle with coarse sugar.
  7. Bake at 200°C (400°F) for 20 minutes, then reduce to 180°C (350°F) and bake for 35–45 minutes, until the crust is golden and the filling is bubbling.
  8. Cool for at least 3 hours before slicing so the filling sets.

Enjoy warm on its own or with a scoop of vanilla ice cream. 🍒🥧
