Shrimp Stuffed Bell Peppers
Ingredients
- 6 bell peppers (mixed colors)
- 300 g (10 oz) ground beef
- 12 large shrimp, peeled and deveined
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese (optional)
- 2 tbsp fresh parsley, chopped
- 1 tsp paprika
- ½ tsp ground cumin
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- Juice of ½ lemon
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds. Arrange them in a baking dish.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the onion until soft, then add the garlic and cook for 1 minute.
- Add the ground beef and cook until browned. Season with paprika, cumin, salt, and black pepper.
- Stir in the breadcrumbs, Parmesan cheese (if using), and parsley. Mix well and remove from the heat.
- Fill each bell pepper with the beef mixture.
- Season the shrimp with salt, black pepper, paprika, and lemon juice.
- Place two shrimp on top of each stuffed pepper. Dot with butter and drizzle with the remaining olive oil.
- Bake for 30–35 minutes, or until the peppers are tender.
- Broil for 2–3 minutes to lightly brown the shrimp.
- Garnish with fresh parsley and serve hot.
