French Onion Beef Pot Roast

Ingredients

For the Beef:

  • 3 lbs (1.4 kg) chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

For the Onion Gravy:

  • 3 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup French onion soup
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 2 bay leaves

For Topping:

  • 1½ cups shredded Gruyère or mozzarella cheese
  • Fresh thyme, for garnish

Instructions

  1. Season the chuck roast with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast for 3–4 minutes per side until deeply browned. Remove and set aside.
  3. In the same pot, melt the butter and cook the sliced onions over medium heat for 20–25 minutes, stirring occasionally, until caramelized.
  4. Add the minced garlic and cook for 1 minute.
  5. Stir in the French onion soup, beef broth, Worcestershire sauce, thyme, and bay leaves.
  6. Return the beef to the pot, cover, and cook:
    • Oven: 325°F (163°C) for 3½–4 hours, or
    • Slow Cooker: Low for 8–9 hours.
  7. When the beef is fork-tender, shred it gently with two forks.
  8. Sprinkle the cheese over the beef, cover for 3–5 minutes until melted.
  9. Garnish with fresh thyme and serve with mashed potatoes, crusty bread, rice, or roasted vegetables.
