Garlic Parmesan Chicken Pasta
Ingredients
- 2 boneless, skinless chicken breasts, sliced
- 300 g (10 oz) penne or fettuccine pasta
- 2 tbsp olive oil
- 3 tbsp butter
- 5 garlic cloves, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ cup chicken broth
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped
- Extra Parmesan for serving
Instructions
Step 1
Cook the pasta according to the package directions until al dente. Reserve ½ cup of pasta water, then drain.
Step 2
Season the chicken with salt, pepper, paprika, and Italian seasoning.
Step 3
Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes until golden and fully cooked. Remove and set aside.
Step 4
In the same skillet, melt the butter. Add the garlic and cook for about 30 seconds until fragrant.
Step 5
Pour in the chicken broth and heavy cream. Stir well and let simmer for 2–3 minutes.
Step 6
Gradually whisk in the Parmesan cheese until the sauce becomes smooth and creamy.
Step 7
Add the cooked pasta and chicken back to the skillet. Toss everything together until well coated. If needed, add a little reserved pasta water to loosen the sauce.
Step 8
Garnish with chopped parsley and extra Parmesan. Serve immediately.
