Creamy Tuscan Chicken Pasta

Ingredients

  • 300 g (10 oz) pasta (penne or fettuccine)
  • 2 chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Season the chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken until golden and fully cooked. Remove and set aside.
  4. In the same skillet, sauté the garlic for 30 seconds.
  5. Add the heavy cream and Parmesan cheese. Stir until smooth.
  6. Add the cherry tomatoes and spinach, cooking until the spinach wilts.
  7. Return the chicken to the skillet and mix well.
  8. Toss in the cooked pasta and coat everything with the creamy sauce.
  9. Garnish with fresh parsley and serve warm.
