Creamy Chicken, Broccoli & Sweetcorn Pasta
Ingredients
- 300 g pasta (casarecce, penne, or rigatoni)
- 2 chicken breasts, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 cup sweetcorn (fresh, canned, or frozen)
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
- Cook the broccoli in boiling water for 2–3 minutes until tender-crisp. Drain and set aside.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Season the chicken with salt, pepper, paprika, and Italian seasoning. Cook until golden and fully cooked, about 6–8 minutes.
- Add the minced garlic and sauté for 30 seconds.
- Pour in the chicken broth and heavy cream. Simmer for 2–3 minutes.
- Stir in the Parmesan cheese until the sauce becomes smooth and creamy.
- Add the cooked pasta, broccoli, and sweetcorn. Toss everything together until well coated. If needed, add a splash of the reserved pasta water to loosen the sauce.
- Garnish with fresh parsley and extra Parmesan before serving.
