Creamy Peach Dessert

Ingredients

For the Peach Layer

  • 500 g fresh peaches, peeled and diced
  • 60 g granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

For the Cream

  • 500 g mascarpone cheese
  • 250 ml heavy whipping cream (cold)
  • 80 g powdered sugar
  • 1 tsp vanilla extract

For the Base

  • 250 g ladyfinger biscuits (or digestive biscuits)
  • 150 ml peach juice (or milk) for dipping

For Decoration

  • Fresh peach slices
  • Mint leaves (optional)
  • White chocolate shavings (optional)

Instructions

  1. In a saucepan, combine the diced peaches, sugar, and lemon juice. Cook over medium heat for 8–10 minutes until the peaches soften. Stir in the vanilla extract and let the mixture cool completely.
  2. In a large bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, beat the mascarpone with the powdered sugar and vanilla until smooth. Gently fold in the whipped cream until light and fluffy.
  4. Quickly dip the ladyfingers into the peach juice and arrange a layer in the bottom of a serving dish.
  5. Spread half of the mascarpone cream over the biscuits, then spoon half of the peach mixture on top.
  6. Repeat the layers with the remaining biscuits, cream, and peaches.
  7. Decorate with fresh peach slices, mint leaves, and white chocolate shavings if desired.
  8. Refrigerate for at least 4–6 hours, preferably overnight, before serving.
