Coffee, Cherry & Chocolate Karpatka

Ingredients
For the Choux Pastry
- 1 cup (240 ml) water
- ½ cup (115 g) unsalted butter
- ¼ tsp salt
- 1 cup (125 g) all-purpose flour
- 4 large eggs
For the Coffee Cream
- 2 cups (480 ml) heavy whipping cream
- 250 g mascarpone cheese
- ½ cup (60 g) powdered sugar
- 2 tbsp instant espresso powder
- 1 tsp vanilla extract
For the Chocolate Ganache
- 200 g milk chocolate, chopped
- 120 ml heavy cream
Filling & Decoration
- 1 cup fresh cherries, pitted
- Extra cherries for topping
- Chocolate shavings (optional)
Instructions
1. Bake the Choux Layers
- Preheat the oven to 200°C (400°F).
- In a saucepan, bring the water, butter, and salt to a boil.
- Add the flour all at once and stir until a smooth dough forms.
- Cook for 2 minutes, then let cool for 10 minutes.
- Beat in the eggs one at a time until smooth.
- Divide the batter between two 8-inch (20 cm) round cake pans lined with parchment paper.
- Bake for 30–35 minutes until puffed and golden. Cool completely.
2. Make the Coffee Cream
- Dissolve the espresso powder in 1 tablespoon hot water and let cool.
- Beat the mascarpone with powdered sugar and vanilla.
- Add the espresso mixture.
- Whip the heavy cream to stiff peaks.
- Fold the whipped cream into the mascarpone mixture until smooth and fluffy.
3. Make the Ganache
- Heat the cream until just simmering.
- Pour over the chopped milk chocolate.
- Let sit for 2 minutes, then stir until silky smooth.
4. Assemble
- Place one choux layer on a serving plate.
- Spread the coffee cream evenly over the pastry.
- Scatter the fresh cherries over the cream.
- Top with the second choux layer.
- Pour the chocolate ganache over the top, letting it drip naturally down the sides.
- Decorate with fresh cherries.
5. Chill
Refrigerate for at least 2 hours before slicing and serving.
Tips
- Fresh sweet cherries give the best flavor, but frozen cherries (well-drained) work too.
- Chill overnight for cleaner slices.
- Use dark chocolate instead of milk chocolate for a richer taste.
- Dust with cocoa powder or grated chocolate before serving for an elegant finish.
