Strawberry Banana Cheesecake
Ingredients
For the Crust
- 250 g graham cracker crumbs
- 100 g unsalted butter, melted
- 2 tbsp granulated sugar
For the Cheesecake Filling
- 500 g cream cheese, softened
- 200 ml heavy whipping cream
- 150 g powdered sugar
- 1 tsp vanilla extract
- 2 tsp lemon juice
- 8 g unflavored gelatin (optional, for extra stability)
Fruit Layer
- 250 g fresh strawberries, sliced
- 2 ripe bananas, sliced
Topping
- 200 ml whipped cream
- Fresh strawberries
- Banana slices
- Strawberry sauce or syrup (optional)
- Crushed graham crackers for garnish
Instructions
1. Make the Crust
- Combine graham cracker crumbs, melted butter, and sugar.
- Press into the bottom and sides of a 9-inch (23 cm) springform pan.
- Chill for 20 minutes.
2. Prepare the Filling
- Beat the cream cheese until smooth.
- Add powdered sugar, vanilla, and lemon juice.
- Whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- If using gelatin, dissolve it according to package directions and fold it into the filling.
3. Assemble
- Spread a thin layer of cheesecake filling over the crust.
- Arrange sliced strawberries and bananas.
- Cover with more cheesecake filling.
- Repeat with another layer of fruit if desired.
- Smooth the top.
4. Chill
Refrigerate for 6–8 hours, preferably overnight.
5. Decorate
Pipe whipped cream on top and garnish with fresh strawberries, banana slices, crushed graham crackers, and a drizzle of strawberry sauce before serving.
