Turkish Milk Rolls (Sultan Lokumu)
Ingredients
For the milk pudding:
- 1 liter whole milk
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 3 tbsp cornstarch
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
For the coating:
- 2 cups unsweetened shredded coconut
For the filling:
- 1½ cups whipped cream (or whipped topping)
- A few drops of pink food coloring (optional)
For garnish:
- Chopped pistachios
- Maraschino cherries
Instructions
- In a saucepan, whisk together the milk, sugar, flour, and cornstarch until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens into a smooth pudding.
- Remove from the heat and stir in the butter and vanilla.
- Spread the shredded coconut evenly over a large baking tray.
- Pour the hot pudding over the coconut and spread it into an even layer about ½ inch (1 cm) thick.
- Let it cool completely, then refrigerate for at least 3 hours or until firm.
- Mix the whipped cream with a few drops of pink food coloring if desired.
- Spread a thin layer of whipped cream over the chilled pudding.
- Cut into rectangles and gently roll each piece into a log.
- Garnish with chopped pistachios and a maraschino cherry before serving.
