Turkish Milk Rolls (Sultan Lokumu)

Ingredients

For the milk pudding:

  • 1 liter whole milk
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 3 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

For the coating:

  • 2 cups unsweetened shredded coconut

For the filling:

  • 1½ cups whipped cream (or whipped topping)
  • A few drops of pink food coloring (optional)

For garnish:

  • Chopped pistachios
  • Maraschino cherries

Instructions

  1. In a saucepan, whisk together the milk, sugar, flour, and cornstarch until smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens into a smooth pudding.
  3. Remove from the heat and stir in the butter and vanilla.
  4. Spread the shredded coconut evenly over a large baking tray.
  5. Pour the hot pudding over the coconut and spread it into an even layer about ½ inch (1 cm) thick.
  6. Let it cool completely, then refrigerate for at least 3 hours or until firm.
  7. Mix the whipped cream with a few drops of pink food coloring if desired.
  8. Spread a thin layer of whipped cream over the chilled pudding.
  9. Cut into rectangles and gently roll each piece into a log.
  10. Garnish with chopped pistachios and a maraschino cherry before serving.
