Mediterranean Pan-Seared Garlic Herb Fish

Ingredients
- 1 large white fish fillet (sea bass, cod, or snapper)
- 1 cup cherry tomatoes
- ½ cup green olives
- 3 garlic cloves, minced
- 2 tbsp olive oil (or butter)
- Fresh rosemary
- Fresh thyme
- Fresh parsley, chopped
- Juice of ½ lemon
Seasoning
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- Pat the fish dry with paper towels.
- Season both sides with paprika, onion powder, oregano, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the fish for 3–4 minutes until golden.
- Flip the fish carefully.
- Add the cherry tomatoes, olives, garlic, rosemary, and thyme around the fish.
- Cook another 4–5 minutes until the tomatoes soften and release their juices.
- Turn off the heat and let the fish rest for 2 minutes.
- Sprinkle with fresh parsley and squeeze lemon juice over the top.
- Serve immediately with rice, roasted potatoes, or crusty bread.
