Easy Mixed Berry Cobbler

A warm, comforting dessert made with juicy mixed berries bubbling beneath a golden, buttery cobbler topping. This easy recipe is perfect for using fresh or frozen berries and tastes incredible served with vanilla ice cream.

Ingredients

Berry Filling

  • 5 cups mixed berries (blueberries, raspberries, blackberries, strawberries)
  • ½ cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • Pinch of salt

Cobbler Topping

  • 1½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup cold unsalted butter, cubed
  • ½ cup milk
  • 1 tsp vanilla extract

Optional Topping

  • Coarse sugar for sprinkling
  • Vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the mixed berries, sugars, cornstarch, lemon juice, vanilla, cinnamon, and salt. Transfer to a greased 9-inch baking dish.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the milk and vanilla until just combined.
  6. Spoon the dough over the berry mixture, leaving small gaps for the berries to bubble through.
  7. Sprinkle with coarse sugar if desired.
  8. Bake for 40–45 minutes, until the topping is golden brown and the berry filling is bubbling.
  9. Let cool for 10–15 minutes before serving.
  10. Serve warm with vanilla ice cream or whipped cream.
