Easy Mixed Berry Cobbler
A warm, comforting dessert made with juicy mixed berries bubbling beneath a golden, buttery cobbler topping. This easy recipe is perfect for using fresh or frozen berries and tastes incredible served with vanilla ice cream.
Ingredients
Berry Filling
- 5 cups mixed berries (blueberries, raspberries, blackberries, strawberries)
- ½ cup granulated sugar
- 2 tbsp brown sugar
- 2 tbsp cornstarch
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- Pinch of salt
Cobbler Topping
- 1½ cups all-purpose flour
- ⅓ cup granulated sugar
- 2 tsp baking powder
- ¼ tsp salt
- ½ cup cold unsalted butter, cubed
- ½ cup milk
- 1 tsp vanilla extract
Optional Topping
- Coarse sugar for sprinkling
- Vanilla ice cream or whipped cream for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the mixed berries, sugars, cornstarch, lemon juice, vanilla, cinnamon, and salt. Transfer to a greased 9-inch baking dish.
- In another bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla until just combined.
- Spoon the dough over the berry mixture, leaving small gaps for the berries to bubble through.
- Sprinkle with coarse sugar if desired.
- Bake for 40–45 minutes, until the topping is golden brown and the berry filling is bubbling.
- Let cool for 10–15 minutes before serving.
- Serve warm with vanilla ice cream or whipped cream.
