  • 500 g (1 lb) beef sirloin or ribeye, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tsp Worcestershire sauce (optional)

For the Caramelized Onions & Peppers

  • 2 large red onions, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 tbsp butter
  • 1 tbsp olive oil

For the Sandwich

  • 2 rustic ciabatta or artisan sandwich rolls
  • 6 slices mozzarella or provolone cheese
  • Lettuce leaves
  • Dijon mustard or garlic aioli (optional)

Instructions

  1. Season the beef with olive oil, garlic powder, smoked paprika, salt, pepper, and Worcestershire sauce. Let marinate for 15 minutes.
  2. Heat butter and olive oil in a large skillet. Add the onions and cook over medium-low heat for 15–20 minutes until caramelized. Stir in the sliced bell peppers and cook for another 5 minutes.
  3. Increase the heat to high. Sear the steak strips for 2–3 minutes until browned but still juicy.
  4. Place the caramelized onions and peppers over the steak, then top with the cheese. Cover the pan for 1–2 minutes until the cheese melts.
  5. Lightly toast the ciabatta rolls. Spread garlic aioli or Dijon mustard if desired.
  6. Add lettuce to the bottom half of each roll, pile on the cheesy steak mixture, then close the sandwich.
  7. Serve immediately with fries, chips, or a fresh salad.
