Chocolate Raspberry Cookies

Ingredients

Cookie Dough

  • 2½ cups (315 g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (225 g) unsalted butter, softened
  • ¾ cup (150 g) brown sugar
  • ½ cup (100 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1½ cups (250 g) dark chocolate chunks or chocolate chips

Raspberry Filling

  • 1 cup (125 g) fresh raspberries
  • 1 tbsp cornstarch
  • 1 tbsp sugar

Topping

  • Extra dark chocolate chunks
  • Fresh raspberries (optional)
  • Flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking trays with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg, egg yolk, and vanilla extract, then mix until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
  6. Fold in the chocolate chunks.
  7. In a small bowl, gently toss the raspberries with the sugar and cornstarch.
  8. Scoop large portions of cookie dough (about 2–3 tablespoons each). Flatten each scoop slightly, place a spoonful of raspberries in the center, then cover with a little more dough and seal the edges.
  9. Arrange the cookies on the prepared baking trays, leaving space between each one. Press a few extra chocolate chunks on top.
  10. Bake for 12–15 minutes, or until the edges are golden while the centers remain soft.
  11. Let the cookies cool on the baking tray for 10 minutes before transferring them to a wire rack.
  12. Serve warm for a delicious molten chocolate center and juicy raspberry filling.

Tip: Sprinkle with flaky sea salt just before serving to enhance the rich chocolate flavor. 🍫🍓
