Creamy Garlic Steak & Shell Pasta

Ingredients

  • 12 oz (340 g) medium pasta shells
  • 1½ lb (680 g) sirloin steak, cut into bite-sized cubes
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1 small onion, finely diced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • ½ cup diced tomatoes
  • 2 tbsp chopped fresh parsley
  • Extra Parmesan, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta shells until al dente. Drain and reserve ½ cup of pasta water.
  2. Season the steak cubes with salt, black pepper, smoked paprika, and Italian seasoning.
  3. Heat the olive oil in a large skillet over medium-high heat. Sear the steak for 2–3 minutes per side until browned. Remove and set aside.
  4. In the same skillet, melt the butter. Add the onion and cook until softened, then stir in the garlic for 30 seconds.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until smooth and creamy.
  6. Add the spinach and diced tomatoes. Cook for 2 minutes until the spinach wilts.
  7. Add the cooked pasta and toss until evenly coated. If needed, stir in a little reserved pasta water to loosen the sauce.
  8. Return the steak to the skillet and gently combine everything.
  9. Garnish with fresh parsley and extra Parmesan cheese.
  10. Serve immediately while hot.
