Shrimp Stuffed Bell Peppers

Ingredients

  • 6 bell peppers (mixed colors)
  • 300 g (10 oz) ground beef
  • 12 large shrimp, peeled and deveined
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 tsp paprika
  • ½ tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Juice of ½ lemon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Arrange them in a baking dish.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the onion until soft, then add the garlic and cook for 1 minute.
  4. Add the ground beef and cook until browned. Season with paprika, cumin, salt, and black pepper.
  5. Stir in the breadcrumbs, Parmesan cheese (if using), and parsley. Mix well and remove from the heat.
  6. Fill each bell pepper with the beef mixture.
  7. Season the shrimp with salt, black pepper, paprika, and lemon juice.
  8. Place two shrimp on top of each stuffed pepper. Dot with butter and drizzle with the remaining olive oil.
  9. Bake for 30–35 minutes, or until the peppers are tender.
  10. Broil for 2–3 minutes to lightly brown the shrimp.
  11. Garnish with fresh parsley and serve hot.

Serve with steamed rice, garlic butter potatoes, or a fresh green salad for a complete and satisfying meal.
