Chocolate Cherry Mousse Cake

Ingredients

For the Chocolate Cake

  • 200 g all-purpose flour
  • 50 g unsweetened cocoa powder
  • 200 g granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 120 ml vegetable oil
  • 180 ml milk
  • 1 tsp vanilla extract
  • 120 ml hot coffee or hot water

For the Cherry Filling

  • 400 g pitted cherries (fresh or frozen)
  • 60 g sugar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp lemon juice

For the Chocolate Mousse

  • 250 g dark chocolate, melted and cooled
  • 500 ml heavy whipping cream
  • 250 g mascarpone cheese
  • 50 g powdered sugar
  • 1 tsp vanilla extract

Decoration

  • Fresh cherries
  • Chocolate shavings
  • Cocoa powder (optional)

Instructions

1. Bake the Cake

  1. Preheat the oven to 180°C (350°F).
  2. Mix the flour, cocoa powder, sugar, baking powder, and salt.
  3. Add the eggs, oil, milk, and vanilla.
  4. Stir in the hot coffee until smooth.
  5. Pour into a 23 cm (9-inch) cake pan.
  6. Bake for 30–35 minutes.
  7. Let cool completely.

2. Make the Cherry Filling

  1. Combine the cherries, sugar, and lemon juice in a saucepan.
  2. Simmer for 5 minutes.
  3. Stir the cornstarch with water and add it to the cherries.
  4. Cook until thickened.
  5. Cool completely.

3. Prepare the Chocolate Mousse

  1. Beat the mascarpone with the powdered sugar and vanilla.
  2. Whip the heavy cream until stiff peaks form.
  3. Fold the melted chocolate into the mascarpone.
  4. Gently fold in the whipped cream until smooth.

4. Assemble

  1. Spread the cooled cherry filling over the chocolate cake.
  2. Top with the chocolate mousse.
  3. Refrigerate for 4–6 hours or overnight.
  4. Decorate with fresh cherries and chocolate shavings before serving.
