Matcha Strawberry Cheesecake
Ingredients
For the Crust
- 250 g digestive biscuits, crushed
- 100 g melted butter
For the Filling
- 600 g cream cheese, softened
- 200 ml heavy cream
- 150 g sugar
- 3 eggs
- 2 tsp premium matcha powder
- 1 tsp vanilla extract
For the Topping
- 250 g fresh strawberries, halved
- 150 ml strawberry glaze
- Matcha powder for dusting
- White chocolate curls
- Fresh mint leaves
Instructions
- Preheat the oven to 160°C (320°F).
- Combine the biscuit crumbs with melted butter and press into a springform pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat the cream cheese until smooth.
- Add sugar, eggs, heavy cream, vanilla, and sifted matcha powder. Mix until creamy.
- Pour the filling over the crust.
- Bake for 55–60 minutes, until the center is slightly set.
- Cool completely, then chill for at least 6 hours.
- Top with fresh strawberries, strawberry glaze, white chocolate curls, and a light dusting of matcha.
