Peach Cobbler Cheesecake

A rich and creamy cheesecake topped with warm cinnamon peaches and a buttery cobbler crumble. This dessert combines the classic flavors of peach cobbler with smooth cheesecake for an unforgettable treat.

Ingredients

Graham Cracker Crust

  • 250 g graham cracker crumbs
  • 100 g unsalted butter, melted
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Cheesecake Filling

  • 680 g cream cheese, softened
  • 200 g granulated sugar
  • 200 g sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch

Cinnamon Peach Topping

  • 4 ripe peaches, sliced
  • 60 g brown sugar
  • 30 g unsalted butter
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 2 tbsp water

Cobbler Crumble

  • 80 g all-purpose flour
  • 50 g brown sugar
  • 40 g cold butter, cubed
  • ½ tsp cinnamon

Instructions

1. Prepare the Crust

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, brown sugar, and cinnamon.
  3. Press firmly into a 9-inch (23 cm) springform pan.
  4. Bake for 10 minutes, then let cool.

2. Make the Cheesecake Filling

  1. Beat the cream cheese until smooth.
  2. Mix in the sugar.
  3. Add the sour cream, vanilla, and cornstarch.
  4. Beat in the eggs one at a time, mixing just until combined.
  5. Pour over the cooled crust.

3. Bake

Bake for 55–65 minutes, until the edges are set and the center is slightly jiggly.

Turn off the oven, leave the cheesecake inside with the door slightly open for 1 hour, then cool completely and refrigerate for at least 6 hours or overnight.

4. Make the Peach Topping

  1. Melt the butter in a skillet.
  2. Add peaches, brown sugar, cinnamon, nutmeg, and lemon juice.
  3. Cook for 5–7 minutes.
  4. Stir in the cornstarch slurry and cook until thickened.
  5. Let cool.

5. Make the Crumble

  1. Combine flour, brown sugar, and cinnamon.
  2. Cut in the cold butter until crumbly.
  3. Bake at 350°F (175°C) for 10–12 minutes, until golden.

6. Assemble

  • Spoon the cooled peach topping over the cheesecake.
  • Sprinkle generously with the baked crumble.
  • Drizzle with caramel sauce if desired.
  • Chill for 30 minutes before serving.
