French Onion Beef Pot Roast
Ingredients
For the Beef:
- 3 lbs (1.4 kg) chuck roast
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
For the Onion Gravy:
- 3 large yellow onions, thinly sliced
- 3 tbsp butter
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup French onion soup
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme (or ½ tsp dried)
- 2 bay leaves
For Topping:
- 1½ cups shredded Gruyère or mozzarella cheese
- Fresh thyme, for garnish
Instructions
- Season the chuck roast with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast for 3–4 minutes per side until deeply browned. Remove and set aside.
- In the same pot, melt the butter and cook the sliced onions over medium heat for 20–25 minutes, stirring occasionally, until caramelized.
- Add the minced garlic and cook for 1 minute.
- Stir in the French onion soup, beef broth, Worcestershire sauce, thyme, and bay leaves.
- Return the beef to the pot, cover, and cook:
- Oven: 325°F (163°C) for 3½–4 hours, or
- Slow Cooker: Low for 8–9 hours.
- When the beef is fork-tender, shred it gently with two forks.
- Sprinkle the cheese over the beef, cover for 3–5 minutes until melted.
- Garnish with fresh thyme and serve with mashed potatoes, crusty bread, rice, or roasted vegetables.
