Chocolate Cherry Mousse Cake
Ingredients
For the Chocolate Cake
- 200 g all-purpose flour
- 50 g unsweetened cocoa powder
- 200 g granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 120 ml vegetable oil
- 180 ml milk
- 1 tsp vanilla extract
- 120 ml hot coffee or hot water
For the Cherry Filling
- 400 g pitted cherries (fresh or frozen)
- 60 g sugar
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp lemon juice
For the Chocolate Mousse
- 250 g dark chocolate, melted and cooled
- 500 ml heavy whipping cream
- 250 g mascarpone cheese
- 50 g powdered sugar
- 1 tsp vanilla extract
Decoration
- Fresh cherries
- Chocolate shavings
- Cocoa powder (optional)
Instructions
1. Bake the Cake
- Preheat the oven to 180°C (350°F).
- Mix the flour, cocoa powder, sugar, baking powder, and salt.
- Add the eggs, oil, milk, and vanilla.
- Stir in the hot coffee until smooth.
- Pour into a 23 cm (9-inch) cake pan.
- Bake for 30–35 minutes.
- Let cool completely.
2. Make the Cherry Filling
- Combine the cherries, sugar, and lemon juice in a saucepan.
- Simmer for 5 minutes.
- Stir the cornstarch with water and add it to the cherries.
- Cook until thickened.
- Cool completely.
3. Prepare the Chocolate Mousse
- Beat the mascarpone with the powdered sugar and vanilla.
- Whip the heavy cream until stiff peaks form.
- Fold the melted chocolate into the mascarpone.
- Gently fold in the whipped cream until smooth.
4. Assemble
- Spread the cooled cherry filling over the chocolate cake.
- Top with the chocolate mousse.
- Refrigerate for 4–6 hours or overnight.
- Decorate with fresh cherries and chocolate shavings before serving.
