Creamy Garlic Butter Salmon with Shrimp & Spinach

Ingredients

For the Salmon & Shrimp

  • 4 salmon fillets (about 6 oz / 170 g each)
  • 12 oz (340 g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste

For the Creamy Spinach Sauce

  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1½ cups heavy cream
  • ¾ cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Season the salmon with paprika, Italian seasoning, salt, and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Sear the salmon for 4–5 minutes per side until golden. Remove and keep warm.
  3. In the same skillet, cook the shrimp for 1–2 minutes per side until pink. Remove.
  4. Melt the butter, then sauté the garlic until fragrant.
  5. Pour in the heavy cream and simmer for 2–3 minutes.
  6. Stir in the Parmesan cheese until melted and smooth.
  7. Add the spinach and cook until wilted.
  8. Stir in the lemon juice and Dijon mustard (if using). Adjust the seasoning.
  9. Return the salmon to the skillet and spoon the creamy spinach sauce over it.
  10. Top with the shrimp, garnish with fresh parsley, and serve immediately.
