Strawberry Mascarpone Cake

Ingredients

For the Sponge Cake

  • 6 eggs, separated
  • 150 g granulated sugar
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • ½ packet baking powder (about 1 tsp)
  • 80 ml heavy cream
  • 150 g all-purpose flour

For the Strawberry Sauce

  • 500 g fresh strawberries
  • 1 packet vanilla sugar
  • 1 tbsp lemon juice
  • 4 tbsp cornstarch, mixed with a little water

For the Cream

  • 500 g mascarpone cheese
  • 300 ml heavy cream
  • 200 g white chocolate, melted
  • 1 tsp vanilla extract

For Decoration

  • Fresh strawberries

Instructions

1. Make the Sponge Cake

  1. Preheat the oven to 180°C (350°F).
  2. Separate the egg whites from the yolks.
  3. Beat the egg whites until foamy, gradually adding the sugar until stiff peaks form.
  4. Whisk the egg yolks with the vanilla sugar.
  5. Fold the yolks gently into the whipped egg whites.
  6. Warm the heavy cream slightly (do not whip it) and fold it into the batter.
  7. Sift together the flour and baking powder, then gently fold them into the mixture.
  8. Pour the batter into a 26 cm (10-inch) round cake pan.
  9. Bake for about 20 minutes, then let cool completely.
  10. Slice the cake horizontally into two layers.

2. Make the Strawberry Sauce

  1. Cut the strawberries into pieces.
  2. Cook them with the vanilla sugar and lemon juice over low heat for about 10 minutes.
  3. Stir in the cornstarch slurry.
  4. Cook until thickened.
  5. Remove from the heat and blend until smooth.
  6. Allow to cool completely.

3. Make the Cream

  1. Beat the mascarpone briefly until smooth.
  2. Add the heavy cream and mix until creamy.
  3. Stir in the melted white chocolate and vanilla extract until fully combined.

4. Assemble the Cake

  • Place the first cake layer on a serving plate.
  • Spread a layer of strawberry sauce.
  • Add a generous layer of mascarpone cream.
  • Repeat with the second cake layer.
  • Frost the top with the remaining cream.
  • Decorate with fresh strawberries.

Refrigerate for at least 4 hours, preferably overnight, before serving.
