Apple Pie à la Mode

Ingredients

For the Pie Crust

  • 2½ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup (225 g) cold unsalted butter, cubed
  • 6–8 tbsp ice water

For the Apple Filling

  • 6–7 Granny Smith or Honeycrisp apples, peeled and sliced
  • ¾ cup (150 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp cornstarch
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, cut into small cubes

Egg Wash

  • 1 egg
  • 1 tbsp milk

For Serving

  • Vanilla ice cream
  • Caramel sauce (optional)

Instructions

1. Prepare the Dough

  1. Mix the flour, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add the ice water gradually until the dough comes together.
  4. Divide into two discs, wrap, and refrigerate for at least 1 hour.

2. Make the Filling

  1. Combine the sliced apples with both sugars.
  2. Add the flour, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla.
  3. Toss until the apples are evenly coated.

3. Assemble the Pie

  1. Preheat the oven to 400°F (200°C).
  2. Roll out one dough disc and place it in a 9-inch pie dish.
  3. Fill with the apple mixture.
  4. Dot the top with butter.
  5. Cover with the second crust, trim and crimp the edges.
  6. Cut a few slits in the top to allow steam to escape.
  7. Brush with the egg wash.

4. Bake

  • Bake for 20 minutes at 400°F (200°C).
  • Reduce the temperature to 375°F (190°C) and bake for 35–45 minutes, until the crust is deep golden and the filling is bubbling.

5. Cool & Serve

Let the pie cool for at least 2 hours before slicing. Serve each slice warm with a scoop of vanilla ice cream and, if desired, a drizzle of caramel sauce.
