Apple Pie à la Mode
Ingredients
For the Pie Crust
- 2½ cups (315 g) all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup (225 g) cold unsalted butter, cubed
- 6–8 tbsp ice water
For the Apple Filling
- 6–7 Granny Smith or Honeycrisp apples, peeled and sliced
- ¾ cup (150 g) brown sugar
- ¼ cup (50 g) granulated sugar
- 2 tbsp all-purpose flour
- 1 tbsp cornstarch
- 1½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 tbsp unsalted butter, cut into small cubes
Egg Wash
- 1 egg
- 1 tbsp milk
For Serving
- Vanilla ice cream
- Caramel sauce (optional)
Instructions
1. Prepare the Dough
- Mix the flour, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the ice water gradually until the dough comes together.
- Divide into two discs, wrap, and refrigerate for at least 1 hour.
2. Make the Filling
- Combine the sliced apples with both sugars.
- Add the flour, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla.
- Toss until the apples are evenly coated.
3. Assemble the Pie
- Preheat the oven to 400°F (200°C).
- Roll out one dough disc and place it in a 9-inch pie dish.
- Fill with the apple mixture.
- Dot the top with butter.
- Cover with the second crust, trim and crimp the edges.
- Cut a few slits in the top to allow steam to escape.
- Brush with the egg wash.
4. Bake
- Bake for 20 minutes at 400°F (200°C).
- Reduce the temperature to 375°F (190°C) and bake for 35–45 minutes, until the crust is deep golden and the filling is bubbling.
5. Cool & Serve
Let the pie cool for at least 2 hours before slicing. Serve each slice warm with a scoop of vanilla ice cream and, if desired, a drizzle of caramel sauce.
